Pear Ginger Fruit Crisp!!



Ahh… the flavors of winter, love them.  Today I spent the day with my mom shopping for Christmas gifts. But before we left I already had a plan on what tonight's meal would be.  I had been looking through some old cookbooks and found a few great recipes I wanted to try.  So before we left to hit the mall with all those other crazy people trying to get a jump on the Christmas shopping , we put a nice pot roast in the crock pot with some sweet potatoes , carrots and shallots. The meat was seasoned with a hint of fresh grated ginger, delicious!.  I also made a cheddar biscuit to go with the meal.  But the highlight of the meal was dessert, of course! When we were at the store picking the items up for the evening meal I noticed that Bartlett Pears were on sale.  99 cent a pound for organic pears, I couldn’t pass up the deal

Pears are in season right now which means only one thing, naturally sweet fruit picked at its prime! So that brings me today’s posting.  Pear with fresh ginger (the ginger made it to the evening meal and dessert! ) fruit crisp.  This is a very simple recipe, which can be used with any fruit that is in season.  Autumn is good for apples, Winter for Pears, Spring for Strawberries and Summer for peaches and blackberries.  I recommend you keep this recipe handy for all seasons J.. The Pear Ginger fruit crisp turned out wonderful!  Crunchy topping on the top with a sweet pear filling which had just a bit of tang of the ginger, mmmm…. Top it off with a scoop of vanilla bean ice cream and you have a dessert that is a total guilty pleasure! Enjoy, happy cooking!

Filling:
6-7 ripe pears, peeled , quartered and thinly sliced
2 teaspoons finely grated ginger
Topping:
2/3 cup all purpose flour
2/3 cup rolled oats
3 tablespoons light brown sugar
3 tablespoons sugar
¾ teaspoon cinnamon
1 teaspoon nutmeg
¼ teaspoon salt
5 tablespoons unsalted butter, melted
2/3 chopped walnuts

  1. Preheat oven 350
  2. Put the thinly sliced pears mixed with the ginger in a 8x8 baking pan (ungreased)


  1. Mix all the topping ingredients together using a two forks until the mixture looks like crumbs.(picture is pre-mixing)



  1. Place the mixtue on the top of the fruit and place pan in oven. Bake for about 40 minutes. (if need, put under the broiler for 1 minute to make it a bit more golden on the top)

  1. Serve with a scoop of vanilla bean ice cream.
